FAQ

My kimchi is bubbling like a witches brew when I open it. Is this normal?

– Yes! You may have seen something similar when you open a bottle of kombucha. Kimchi is raw and lacto-fermented, meaning that it continues to ferment and produce lactic acid bacteria (LAB aka probiotics) that also serve as natural preservative of the content. This means that all the wonderful “good bacteria” producing activity inside the jar forms a little bit of gas, and thus pressure, that gets trapped within the jar, much like carbonation of soda. The bubbling, the fizzing, or the “exploding” of kimchi is attributed to this process of fermentation. All 100% natural and healthy! (For this reason, we request that you refrigerate the product for a few hours first before opening it, and that you please open the jar over the sink in case you experience any kind of spillage of content due to the bubbling action.)

My kimchi did not arrive cold. Should I be worried that my kimchi is spoiled?

– Absolutely not! Although we pack our shipment with enough cold packs to last the journey to arrive at your door nice and cool, we cannot ensure the fluctuation in temperature and atmospheric changes during its travel at all the different points of freight storage. There is no need to worry, however. Your kimchi is 100% safe! Although kimchi is kept cold to slow down and control its on-going fermentation process, it simply experiences continued fermentation during the time it is not kept cold. Deliveries that arrive in such state may experience some bubbling or “exploding,” or even some leakage of content due to high pressure build up as described in the previous answer. Please follow our suggestion on how to handle such item and make sure to enjoy your kimchi! (This condition will not constitute as damaged or spoiled.)

How do I know if my kimchi is fresh and not spoiled?

– There’s no getting around the fact that kimchi has a unique aroma, but the proof is in the taste. Kimchi, like other fermented products such as kraut, will taste strong, with some sweetness and fizz (from the fermentation!) and a vinegary tang. It should not taste rotten, but rather, refreshing and pickly. If you try kimchi, and your reaction is that it tastes spoiled, discard it. In addition, if you see any presence of mold, please discard it. However, we doubt you’ll feel that way when you try Kimchi Kooks! The kimchi techniques have been proven over many millenia!
